CRANBERRY ORANGE MUFFINS

2 cups all purpose flour
2/3 cup plus 2 tablespoons sugar
1 tablespoon baking powder
Ĺ teaspoon salt
1 cup walnuts (toasted and chopped) I DONíT PUT THE NUTS IN
1/3 cup vegetable oil
2 large eggs
1 Ĺ cups diced orange (about 2 medium, peeled)
1 cup frozen cranberries, thawed

In large bowl, combine flour, 2/3 cup sugar, baking powder, salt and walnuts; mix well. Whisk together oil and eggs until well blended. Make a well in centre of flour mixture and pour in oil mixture along with oranges and cranberries. With large spatula, gently fold dry ingredients into wet ingredients just until dry ingredients are moistened. Spoon into 12 greased (2 1/2x1 inch) muffin pans and sprinkle with remaining 2 tablespoons sugar.

Bake at 350 degrees for 25 to 30 min. or until tops are firm to the touch. Makes 12 muffins.
