Ginger lemon chicken breasts
(i use chicken but you can use any meat or tofu i am sure)
To cook the chicken i usually use a shallow dutch
oven on the stovetop, but
use anything that will hold the liquids. depending on how much you like
ginger, you can alter it to your taste. if you love ginger like me then
the chicken with dry ground ginger before you cook it. If you are
tenderizing your breasts put ginger on then tenderize. play around with
flavor. i never measure, but I think this is about how much i use.
Cook chicken in about
1 1/2 cups of water
1/2 cup of your favorite white wine
a few tablespoons of lemon juice (per your desire)
along with about 10 thin slices of ginger.
cook about 10 - 20 minutes depending on size of
chicken. Cook thoroughly.
(cooking chicken in liquids keeps is moist)
when chicken is cooked thoroughly ... remove from liquids and brown on
frying pan with a small amount of olive oil.
Serve with plain white rice and steamed veggies and you have a tasty
