SPENCER LEMON CHEESECAKE SQUARES

CRUST:
20 VANILLA WAFERS (CRUSHED)
½ CUP FLOUR
½ STICK BUTTER

CUT IN THE BUTTER UNTIL YOU HAVE COURSE CRUMBS…
PUT IN AN 8 X 9 GREASED PAN. BAKE FOR 15 MINUTES @350 DEGREE OVEN

LEMON FILLING:
8 OZ. CREAM CHEESE
1 CUP SUGAR
BEAT THIS UNTIL MOISTENED.
ADD –
2 EGGS
¼ CUP LEMON JUICE

BEAT UNTIL SMOOTH. POUR OVER CRUST. BAKE 20-25 MINUTES.
SPRINKLE WITH POWDERED SUGAR.

Footnote –

I was out on tour with Natalie from March 17 to March 26, 2007 – taking care of little Mary Frances. On our stop in Spencer, WI on March 24th, the ladies of that community served us a very wonderful homecooked meal and one of their desserts were those delicious lemon squares. I asked them for the recipe so I could add it to the website and of course, make them myself. They are very simple to make and so tasty! I decided to refer to them as the Spencer Lemon Cheesecake Squares. Also another lovely lady at this venue kindly presented me with some “cheese curds” made locally. They were so delicious, I had to have more to take home to Cape Breton!
