Maple Baked Beans

This is one of my Grammy's favourites - which she passed on to me by way of the Nova Scotia Pictorial Cookbook. Enjoy - They're awesome!!

4 cups/1L White Beans (Grammy says Baby limas are the best)
12 cups/3L Cold water
5 Slices bacon (cut in 1/2" or 2.5cm pieces).
1 Onion Sliced
1cup/250ml Cup Maple Syrup
1/2 cup/125ml Chili Sauce (if you can get homemade - it's even better)
1tsp/5ml salt
1tsp/5ml dry mustard

Soak beans in cold water overnight. Drain and place half of beans in casserole: add bacon, onion and remaining beans. Combine half of maple syrup with chili sauce, salt and mustard; pour over beans. Add boiling water to cover and bake, covered, in 300F/150C degree oven 4 hours. Add remaining maple syrup as liquid is needed. Makes 12 servings.

p.s. I call Grammy from Florida every time I make this dish. And, every time she reminds me that the better the quality syrup and bacon the better the dish turns out - so don't skimp!

This is great cure for a cold winter's night! (not that we have those here. instead, we have to turn the air-conditioning way down and pretend…. :-)
